Sample Recipes

Here are a few recipes from some of the ladies in our church. We hope you enjoy them.

The following recipes are for the March Menu that was delivered on March 29, 2008. The items in parentheses are items from the Angel Food delivery. The "grocery list" is supplemental items you'll need in addition to complete the meal.

 

Roast Beef (Top Sirloin Roast)
Mashed Potatoes
(Borden Shelf-Stable Milk, Blue Bonnet Margarine)
Green Beans
(16 oz frozen green beans)

Grocery List
Aluminum Foil
Garlic salt
Pepper
Olive Oil
3 pound bag potatoes

Roast Beef
Preheat oven to 450 degrees.
Rub Roast with olive oil, season with garlic salt and pepper. Bake roast (uncovered) at 450 degrees for 15 minutes, then turn down the oven temperature to 350 degrees, Bake until internal temperature of the roast is 160 degrees with a meat thermometer (for medium) or approximately 45 minutes to one hour. Let stand for 10 minutes covered with foil before slicing.

Mashed Potatoes
Peel and boil potatoes until fork tender; drain water.
Add 2-4 tablespoons of margarine and milk. Mash the potatoes, adding milk until fluffy. Reserve 6-8 cups mashed potatoes for shepherds pie recipe.

Shepherds Pie (16 oz ground turkey, 16oz frozen mixed vegetables)
Tossed salad

Grocery List
1 Onion
1 16 oz bag grated sharp cheddar cheese
1 head Romaine lettuce
Salad dressing (Ranch or Caesar)

Brown 1 pound ground turkey with ½ chopped medium onion. When cooked add 16 oz frozen mixed vegetables. Let this simmer until heated through.

In a 9 x 13 pan, pour meat/vegetable mixture in bottom of the pan. Cover with mashed potatoes and sprinkle cheese on top.

Bake at 350 degrees until casserole is warmed through and the cheese is melted.

Chicken Caesar Salad (2 pound breaded chicken breast strips)
Dinner Rolls

Parmesan Cheese
Croutons
Dinner Rolls

Saute breaded chicken breast strips in 2 tbsp of margarine until all of chicken is browned.

Tear up romaine lettuce into bite sized pieces. Mix in croutons. Sprinkle with parmesan cheese. Divide into individual servings. Top with chicken slices and Ranch or Caesar dressing.

Chicken Fajitas (Boneless Skinless IQF chicken)

Grocery List
Vegetable Oil
Ginger
Garlic Powder
Tortillas
Sour Cream
Salsa
1 Red/2 Green Peppers

Slice boneless skinless IQF chicken. Brown these chicken strips in vegetable oil seasoned with 1 teaspoon ginger and ½ teaspoon garlic powder. Remove chicken strips to serving bowl as pieces are cooked through.

Add 1 more tablespoon vegetable oil to the frying pan and stir fry red and green pepper until crisp tender (about 3-5 minutes)

Add chicken to cooked peppers and simmer for 3-5 minutes.

Serve by rolling up this mixture in a tortilla. Serve with sour cream and salsa.

Roast Pork (Boneless Pork Fillet)
Pork and Beans
(15 oz Pork and Beans)
Salad

Grocery List
Brown Sugar
Dry mustard
Onion Flakes
Olive oil

Roast Pork
Preheat oven to 450 degrees. Rub Pork Fillet with olive oil and sprinkle with garlic powder and pepper.
Bake at 450 degrees (uncovered) for 15 minutes, then decrease oven temperature to 350 degrees. Continue baking roast until the internal temperature reaches 170 degrees and juices run clear or approximately 1 hour. Let stand for 10 minutes covered with aluminum foil before slicing.

Pork and Beans
Place in microwave safe shallow dish. Add 1 ½ tsp brown sugar, ½ teaspoon dry mustard, and a sprinkle of onion flakes. Heat on high until heated through, about 5 to 6 minutes.

Chicken Supreme (IQF chicken leg quarters)

1 pkg. onion soup
1 (8 oz.) bottle Catalina dressing
1 (16 oz.) can whole berry cranberry sauce

Preheat oven to 350 degrees. Remove skin from chicken leg quarters. Place chicken on 9 x 13 baking pan. Mix remaining ingredients and cover chicken. Bake one hour.

Turkey Loaf
Steak Fries
Green beans with Bacon and Onions

Grocery List
Bread crumbs
Egg
Green pepper
Onion
Classic stir fry sauce
Bacon

Turkey Loaf
Place turkey in bowl add 1/4 cup bread crumbs,1/4 cup green pepper,1/4 cup chopped onion, 1/4 cup classic stir fry sauce. Mix together form into loaf place in loaf pan coat outside of loaf with stir fry sauce then bake at 350 degrees uncovered for 1 hour.

Green Beans with Bacon and Onion
Saute bacon (cut into small pieces) in fry pan add onion (diced) until bacon is well done. Add to beans then place into serving dish. Enjoy!

Chicken Breast and Stuffing (Boneless Skinless IQF Chicken)
Mixed Vegetables

Grocery List
Boxed Stuffing Mix
Blue Bonnet Margarine
Can of French Fried Onions
Can of Cream of Celery Soup

Chicken and Stuffing
Prepare stuffing as directed on box. Grease a 13 x 9 pan. Place stuffing in pan and spread to cover bottom of pan. Place chicken breasts on top of stuffing. Cover top of chicken with soup then top with french fried onions. Bake at 350 degrees for 1 to 1 1/2 hrs.

Serve with Mixed Vegetables.
